Dinner time can be tough on us parents. Having to figure out and cook a meal every night that the whole family can enjoy can be quite a challenge. We’re not short order cooks! And we don’t want to have to beg our toddlers to eat their dinner. This is why we are sharing two yummy toddler dinner ideas that the family (including toddlers) will love–Taco Pizza and Stuffed Sweet Potatoes.

These two dinner recipes use Stonyfield YoBaby yogurt. We replaced sour cream with Stonyfield’s YoBaby plain yogurt in these recipes because not only does their organic yogurt provide calcium, it also provides probiotics, protein and vitamin D! It also gives you that tangy taste that you’re looking for, but has more benefits than sour cream. Watch our step by step video to see how to make these tasty meals. Taco Pizza recipe with Stonyfield Yobaby Plain yogurt.

Taco Pizza

Ingredients

  • 1 tube refrigerated pizza crust dough
  • 1 Stonyfield YoBaby Plain Yogurt
  • 1 pound ground beef
  • 1 can black beans
  • 1 envelope (2-4 tbsp) taco seasoning, to taste
  • 1 medium tomato, chopped
  • 2 cups shredded Mexican cheese
  • 1-2 cup shredded lettuce
  • optional: avocado, taco sauce, etc.

Directions

  • First, preheat the oven to 375 degrees.
  • Next, unroll the pizza crust dough on a large cookie sheet.
  • Bake at 375 degrees for 10-12 minutes or until golden brown.
  • While the pizza crust is baking, brown the ground beef. Then add a can of drained black beans for more protein and the taco seasoning. Let it simmer for 3-5 minutes and stir it occasionally.
  • When the pizza crust is finished baking, remove the sheet from the oven and let it cool for 3-5 minutes.
  • Once cooled, spread the Stonyfield YoBaby Plain Yogurt over the crust.
  • Next, sprinkle the ground beef and black bean mixture over the top, then the lettuce, tomatoes, avocado and cheese (or whatever toppings you choose).
  • Cut the pizza into desired serving-sizes and serve immediately.

This yummy toddler dinner recipe makes enough for the whole family. Any extra that is not eaten, cover and place in the fridge for cold taco pizza later. 🙂

Stuffed Sweet Potatoes recipe with Stonyfield YoBaby Plain yogurt.

Stuffed Sweet Potatoes

Ingredients

  • 2 sweet potatoes
  • 1 Stonyfield YoBaby Plain Yogurt
  • 1 tbsp extra virgin olive oil
  • 2 small chicken breasts, cooked & shredded
  • 4 tbsp BBQ sauce
  • 1/2 cup shredded Mexican cheese
  • 2 tbsp fresh chives, coarsely chopped

Directions

  • First, preheat the oven to 400 degrees.
  • Place your sweet potatoes on a baking sheet and poke holes all over the potatoes with a fork.
  • Next, rub the sweet potatoes with extra virgin oil.
  • Then put the sweet potatoes in the oven and let them bake at 400 degrees until they are fork tender–about 1 hour.
  • When the sweet potatoes are ready, gently cut an opening slit in each. Use a spoon to gently remove the flesh from each potato and place the sweet potato flesh into a medium bowl. Mash all of it together with a fork.
  • Add the shredded cooked chicken breasts to the medium bowl and the BBQ sauce. Mix everything together with a spoon.
  • Spoon the BBQ/ chicken/ sweet potato mixture back into the skins of the sweet potatoes and top each one with a dollop of Stonyfield YoBaby Plain Yogurt and garnish with chopped fresh chives.
